A week ago I had Ruben over for dinner. I ended up making spinach pie by accident. This is how it looked.
It was really good. So spinach pie has always been a favourite of mine. I really like spinach, pie and feta cheese and this spinach pie includes all of that into one. It has to be good.
So how to you make it?
- The pie pastry is just regular pie crust, flour and butter mostly.
- For the filling, blend thawed frozen spinach, an egg, chopped green olives, chopped feta cheese and some of the juice.
- Then place chopped tomatoes and leek in the pie first and add the spinach mix.
- Bake at 225 degrees for 30 min or until the pie is golden and the filling is firm.
Pie is always super simple to make, but you need to have time to make dinner an hour before you are going to eat it, so I make it more seldom than I would have liked. I love how pie makes left overs much more fun and that you can put almost anything in a pie. all you need is flour, butter and eggs in your pantry and then you put anything from your fridge in the pie and call it dinner. Perfect!
