One night in Trondheim

My first night in Trondheim, I almost lost my flight, but caught the concert of Knauskoret. After the concert, we got food at Lyche.

Dinner last night

For once I found a dish on the internet and almost didn’t alter it at all. Or, you know, just a little.

  1. Peel and dice sweet potato, fry in the oven with salt, pepper and olive oil.
  2. Add whole garlic cloves, red onion and kidney beans to the sweet potato.
  3. Dice tomato, pepper (paprika) and chop some spring onion and add to a bowl.
  4. Roast pumpkin seeds in a dry frying pan and add to the bowl as well.
  5. Add the hot ingredients from the oven and mix.
  6. Add some cottage cheese and keep your favorite hard cheese handy (we used Manchego).

I wish we had a fresh citrus fruit for dressing, it would have been really good with the mix.

Shared meals

I wish we could have more ways of shearing meals here in Norway, like they do in Korea. That you go to restaurants where the food is supposed to be shared.

We first got some kind of soup with meat and vegetables and after we finished they put rice in the pot, mixed everything and this is what if looked like after the second “round”. Very good and a cool way of doing it.

Dinner with friends

So last night we were out with friends at Olympen to have whole roasted (suckle?) pig. I love coming together like this and really wish we could do it more often. To share a meal, have some really wonderful food and spend an evening with amazing people. I highly recommend the whole roasted pig at Olympen if you want a place for your Christmasparty or a friend get together like we did. It is already a tradition!

Scones for my coworkers

Probably one of the simples things I have tried to make is scones. I was baking for my coworkers and because I didn’t dare do something with yeast, I made scones.

I picked the recipe from one of my old recipe books from school, so the scones are probably not very British, but simple. The dough was made just by mixing everything together. I guess I should have known that the recipe was too easy, but sometimes that is what you want. Something simple.

I then cut the dough in four, flattened the loaves on plates and cut them again in four. I hope you excuse my orange kitchen walls, we haven’t decided what to do with them yet. Unfortunately they are not the best for food photography.

They didn’t look very pretty, but I hoped they would look better after they had been in the oven. And no matter how they looked, I knew they would taste really good.

I was sorry they didn’t rise more, but I have never been good at getting things as fluffy and light as they should be. But nobody thought that baking was my forté, did they.

In the end they tasted really nice and everybody at work were very happy, so I am content. What do you like to bake?

A date night out

Almost exactly a month ago we went for a lovely date night. Erik invited me out to Izakaya, a Japanese restaurant by St. Olavs plass.

It has a very simple menu of small dishes and you just order as many as you want.

Kimchi, for instance. And the people who work there are very helpful and tell you a lot of information about the food.

Røkelaks passer til alt

Røkelaks! Røkelaks er fisk du ikke trenger å steke og som kommer ferdig i biter (om du har god råd og kjøper den ferdig skivete, i hvert fall) og gjør dermed middagslaging ekstremt effektivt. Spesielt når du kombinerer røkelaksen med induksjonsplatetopp. Da går det fort, da.

Så her kommer enda en rask oppskrift på middag som ikke tar deg mer enn 15 minutter å lage. Jeg liker det når jeg ikke må tine noe av det jeg skal spise til middag og mesteparten av det jeg skal spise tåler å ligge lenge, så jeg ikke må handle hele tiden. Da passer pasta med røkelaks ekstra godt.

For å få til dette mesterverket:

    1. Kok pasta, følg anvisning på pakken.
    2. Skjær opp en løk og andre løkvekster.
    3. Fres på middels varme.
    4. Tilsett et ønsket melkeprodukt (her fløte og ost).
    5. Bland pasta, grønnsaker og laks.
    6. Ta bilde av det.

Det viktigste når man lager mat er at man lager noe man liker. Det skal ta så mye tid som du ønsker og smake så godt som du ønsker. Kunsten med hverdagsmiddager er å klare å finne på ting som passer også til hvor ofte du handler og hvor mye variasjon du vil ha i kosten.

Jeg som liker å ikke spise det same hele tiden jobber hardt med å finne på nye ting jeg kan rullere på, men røkelaks dukker ofte opp må jeg innrømme.

English: you should try smoked salmon on your pasta with some leek and sour cream. It is fast, delicious and so easy.

Erik hadde kjøpt masse deilig ost til da jeg kom hjem fra Norwich og vi innså fort at vi hadde mer enn nok til gjester. Så da inviterte vi Tone over på ost og vin (og øl). Og så tok jeg noen bilder av stua i samme slengen. Det er dessverre allerede to uker siden vi gjorde noe i leiligheten sist, men jeg håper vi snart føler vi har roen til å gjøre litt til. Er fremdeles en del detaljer igjen som må fikses. Røykvarslere ikke minst…

De gule tallerknene er nye. Jeg arvet dem fra farmor og de er faktisk veldig praktiske. De er sikkert fra 50-tallet og er derfor ganske små. Det er utrolig å tenke på hvor mye porsonsstørrelser har endret seg på 60 år. Disse er i hvert fall våre nye “slanketallerkner”, fordi de får deg til å føle deg mett og forsynt fordi du har fylt tallerkenen din, men det ikke var så mye mat.

17.mai

Greit, jeg vet jeg er treig. Men for en uke siden fikk jeg endelig satt meg ned og overført bilder fra kameraet mitt. Og det som var aller eldst var bilder fra 17.mai. 17.mai i år var skikkelig bra. Vi hadde frokost hos oss, men alt for mye mat og mange bunader. Vi dro ned til sentrum og fikk sett litt barnetog og unngikk å drukne i det ene regnskyllet som kom. Vi spiste lønsj i logen med familien til Erik, hørte på Den Norske Studentsangforening og pappa på aulatrappa og spiste is med mine foreldre. Så dro vi til Sofienbergparken for å drikke øl og prate skit med venner. Fordi vi skulle på kanotur dagen etter ble det en kort kveld, men det var en veldig bra dag.

Saturday night when we got to know Jonas and Hilde in our building, we were being generous in turns. First they wondered if we would share their dessert (strawberries). We accepted, but said that we would bring some white port to add. Then after the port was empty they brought this one out. This is the best tequila I have ever tasted, and when I googled it seems the whoe internet likes it too. I even saw this post on Cake Wrecks:

Spring and spontaneousness

As I was in Tønsberg last weekend, I had to see Sara. It’s been ages and it was sunny and wonderful.

Montalcino and Montepulciano

In one day we did two wine tastings and were lucky to see two very beautiful cities as well. First we went to Montacino.

The next wine tasting was in Montepulciano. Lonely Planet had complained that it was very hilly, but I didn’t believe them, but when we came there, it was true! The whole town was one big clilmb.

We ended up buying a very expencive bottle of wine in Montalcino, as an investment. I wonder what occation will be the right one.
